Dime bar like snacks!!!!

Just a mid January post to derail a few diets or help with the real food drive of making your own snacks and things instead of shop bought!!!

Chocolate caramel crackers

Salted crackers ;Saltines, Matzos, Doriano Italian crackers
(Sainsburys savoury biscuit aisle)I use these.

8oz unsalted butter

8oz light brown soft sugar

!/2 teaspoonful vanilla essence

Approx 8 oz dark chocolate melted.

Preheat oven to 180C ( 350F) Gas 4/5

Line a deep baking tray with foil (have foil coming up sides a bit) and
then line foil with non stick baking parchment. This helps when getting
finished product out of tin and saves on scrubbing! Place a single layer
of crackers over the base of the tin to cover the base.

Heat the butter (in pieces) in heavy based saucepan and add the sugar
and stir until melted together.Bring to the boil whilst stirring and
boil for 3-4 minutes (keep stirring.)

Remove from heat and carefully add vanilla essence, stir and quickly
pour mixture over the crackers in tin (need to be quick as it will
start to set) Put into the oven and bake for 15 minutes checking near
end of cooking time in case of burning.

Meanwhile melt the dark chocolate.

Remove from oven and wait for the mixture to stop bubbling and then
cover with the melted chocolate.

Allow to cool and then refrigerate to completely cool and solidify.

Break into pieces to serve.
