Plum cake!!!

About a month ago I stumbled upon an amazing plum cake recipe!! This recipe has had a few trips out recently and has had some rave reviews with many people wanting the recipe so I thought that I’d blog it!!

I made enough for two loaf tins each time I have made it…..

200g softened butter
The grated zest of two oranges
200g caster sugar
4 eggs, beaten
250g self raising flour
1 tsp baking powder
120g of rolled oats (plus some for sprinkling)
A small punnet of plums (about 6/7 or about 500g – though the more the better!)

Grease and line two loaf tins
Preheat the oven to 160*C or 140 if you have a fan assisted
Mix the butter, sugar and orange zest in a bowl until creamy consistency
Mix in the eggs gradually
Add the flour and the oats and the baking powder and stir gently until all ingredients blended
Chop and add about two thirds of the plums (I used about 1 and a half plums per top of loaf for the decorating)
Mix in the plums and then separate mixture into the 2 tins spreading it down evenly
Sprinkle a few oats on the top of each loaf
Slice and arrange the plums as per piccie above!! And push them slightly into the mixture
Bake in the oven for 70 minutes
Cool and eat!!!!
