Apple Cake Fingers

Ahhhh Apple cake!!!!! My favourite thing of the moment and a fab way of using up any of the cooking apples left sculling about!!!


150g plain flour

150g sugar

1/2 tsp baking powder

1/2 tsp mixed spice

pinch of salt

90g butter (softened)

1 large egg (beaten)

75ml milk

65g cooking or eating apples ( I doubled this amount and instead of chopping the apples I whizzed them in the food processor to blend them into the cakes more!)


Preheat oven to 190 C / gas mark 5

grease and line a swizz roll tin or a square baking tin (7 by 11 inches)

Mix together the flour, baking powder, salt, spice and sugar and rub in the butter until you have breadcrumb textured ingredients.  Add the egg and milk and mix until smooth and then add the apple.  Pour the mixture into a baking tin and bake for 35 minutes (until golden coloured and firm to the touch.  Remove from oven and leave cake to cool in the tin.

When cold prepare a glaze of icing sugar, lemon juice and water and pour this over the cake.  Let it set and then turn out the cake and cut into slices!!
