Lemon Squash

This is a freezeable squash that is REALLY refreshing!


6 lemons

700g sugar

2tsp citric acid

Peel the lemons using a potato peeler (reserve this for later)

Halve and juice the lemons into a bowl

Put the sugar in a jug and add 1.2 litres of boiling water, stir to dissolve the water and then stir in the citric acid and lemon juice

Pour the liquid into the containers and then divide the lemon peel between the different containers (this makes them look pretty enough for gift use as well as adding extra tang!!)

Remember if you are freezing the squash then only fill your container to 3/4 full!! or they’ll split!
