Strawberry Jam

After the success of the cherry jam and the sight of some more strawberries in the garden plus an offer on them in the shops I decided to try my hand at some strawberry jam!



1lb of strawberries

1lb of soft fruit jam sugar (or sugar + pectin)

the juice of 1 lemon


1. hull and slice strawberries and layer with sugar in a pan, cover with lid and leave for 24 hours

2. uncover after 24 hours and add the lemon juice, then slowly bring to the boil and then boil for about 20 mins or until a good set reached.  I test mine on a cool saucer, it should wrinkle well and when you run your finger through it the two sides should remain seperate.

it’ll end up looking like this at first though almost like you are boiling it in milk!!!!!

3.  Jar the jam in sterilized, warm jars.  You don’t want the jam to crack cold jars!!

This jam was tested on my class in school and on staff (all willing guinea pigs) and on the scones the class made that morning!!! Yum!!! they all absolutely loved it and one declared it was the fruityest jam they’d tasted!
