Cherry Jam

Sunday Iwas at my sisters house mid morning when she mentioned that her cherry tree was edible and would I like some cherries as they had tonnes…. no thinking I straight away said Yes please, but Mum and Mouse’s mother in law had bagged the two bags they had which meant us climbing the tree to pick more cherries.  We managed around 12-13lbs of picking before we needed to acquire some sort of ladder, which we didn’t bother to do!! My wonderful Niece who is two spent the time pulling the leaves and stalks off the cherries hurled from the tree into the bucket.

Well I drove all the way home then to think hmmmm if I eat 7lbs of cherries I’ll have gut rot!!  So 2lb went into 2, 1lb jars and were filled around with some yummy bramble brandy!

Then I stoned and halved 4lbs of cherries to make jam!!

4lb of soft fruit jam sugar (or ordinary sugar+required amount of pectin)

Juice from 1 lemon

Sterilized jars – I wash mine in the dishwasher then dry then and warm them in the oven

1. Mix cherries in a pan with the sugar cover with lid/cloth and leave for 24 hours

2. Remove cover, add the lemon juice and put pan onto the heat, bring slowly to the boil and then boil well until the jam has reached a set (I test using a teaspoon or so of jam and blob some jam onto a cold saucer)  This took mine about 20-25 minutes post reaching boil point.  Keep stirring jam regularly.

3.  Jar up the jam in warmed jars and leave to cool and set!

    Great post, I have never seen a recipe for cherry jam, might give it a go!

      do its lovely but it took a fair bit of boiling to set it!! but YUM!!!!
